Lab-grade pH measurement in fresh or frozen meats — no slurry, no bench required.
The Apera PH60Z-MT (AI3751) pairs the Bluetooth-enabled PH60-Z smart meter body with the Swiss-engineered LabSen 765 titanium blade spear electrode for direct, lab-grade pH measurement in fresh and frozen meats, fish, poultry, cheese, dough, and other solid food matrices. No sample preparation required.
The PH60Z-MT is Apera's smart handheld pH meter kit purpose-built for direct solid-food pH measurement. It combines the PH60-Z meter body — part of Apera's ZenTest smart tester series powered by Bluetooth 5.0 — with the LabSen 765 blade spear electrode, a Swiss-engineered probe designed specifically for high-protein, high-fat sample matrices where conventional electrodes fail.
The kit ships complete and ready to use: PH60Z-MT meter, LabSen 765 electrode, pH 4.00/7.00/10.01 buffer solutions, soaking solution, Apera CalPod Solution Organizer, and a rugged carrying case. No additional accessories needed to begin taking measurements in the field or on the processing floor.
Standard pH electrodes struggle in meat and solid food matrices for two reasons: junction clogging from proteins and fats, and electrolyte immiscibility. The LabSen 765 addresses both through a combination of an open junction and a polymer electrolyte that eliminates those failure modes — delivering stable, repeatable readings without the fouling issues that force frequent recalibration or probe replacement on conventional units.
The food-grade titanium blade sheath is built to penetrate hard or frozen sample surfaces directly. Insert the spear tip into the sample, wait for stabilization, read. No slurry preparation, no homogenization, no secondary containers. The glass membrane used in the LabSen line is engineered to be approximately 10 times stronger than a traditional bulb glass membrane — reducing breakage risk in the physically demanding food processing environment. The built-in temperature sensor provides automatic temperature compensation throughout the measurement.
The PH60Z-MT connects to the free ZenTest Mobile App (iOS and Android) via Bluetooth 5.0. Through the app, operators can run guided step-by-step calibration workflows, customize parameter settings, and capture measurement data with time stamps, geo-location tags, notes, and photos — all stored in the cloud-based data logger. Data can be shared directly from the app via email, which is practical for quality documentation, HACCP recordkeeping, or regulatory submissions.
The meter operates in hybrid mode: it functions as a standard tester without a smartphone connection, so a dead phone battery doesn't stop work on the floor. The 3-color backlit display provides an at-a-glance reading status indicator. Auto Reading Lock holds the stabilized reading on screen, and the Reading Alarm can be configured to flag out-of-range results.
The PH60Z-MT is relevant to any licensed operation that processes or handles plant-derived or animal-derived material where pH directly impacts product quality, safety, or compliance — including cannabis-infused edibles production, licensed food-manufacturing co-packers, and any facility running meat, fish, or high-protein extraction matrices. The blade spear form factor is also useful for direct pH testing of semi-solid substrates including dense doughs, gels, and cured or fermented products.
The complete kit format with calibration buffers and organized CalPod means technicians aren't hunting for solutions or improvising calibration setups. Everything travels in the included carrying case. Apera backs the meter with a two-year warranty and the LabSen 765 electrode with a six-month warranty.

Yes. The LabSen 765 titanium blade spear is designed to cut through hard or frozen sample surfaces directly, allowing pH measurement at the frozen stage without thawing or sample preparation.
No. The meter operates in hybrid mode and functions as a conventional tester without a smartphone. Bluetooth connectivity to the ZenTest app is optional and adds cloud logging, guided calibration, and data-sharing features — but is not required to take readings.
Liquid electrolytes are prone to immiscibility and junction clogging when in contact with high-protein or high-fat samples like raw meat. The polymer electrolyte eliminates direct liquid-to-sample contact at the junction, preventing the clogging and fouling that degrades accuracy and shortens electrode life in these matrices.
Yes. The LabSen 765 is a replaceable electrode compatible with the PH60 and PH60-Z meter body series, as well as Apera meters with 8-pin connectors including the PH400, PC400, SX751, and SX736. Replacement electrodes can be ordered separately.
The kit includes ready-to-use pH 4.00, 7.00, and 10.01 buffer solutions along with the Apera CalPod Solution Organizer to hold solutions during calibration. The ZenTest app provides step-by-step guided calibration, and the meter supports 1–3 point auto-calibration with automatic buffer recognition.
